Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1/4 cup pine nuts, toasted
  • 1 tablespoon fresh mint, roughly chopped
  • 2 tablespoons fresh parsley, roughly chopped
  • 3 tablespoons lemon juice
  • 1 tablespoon extra virgin olive oil
  • sea salt and black pepper, to taste

Directions

Make: 1. Combine quinoa and broth in a sauce pan. Bring to the boil. Stir, cover and reduce heat to low. Let the quinoa cook for 12-15 minutes or until soft and water is absorbed. Remove from heat and let stand, covered, for 5 minutes. 2. Meanwhile, heat a dry skillet over medium high heat. Add pine nuts and toast until brown, about 2-3 minutes. 3. Chop herbs and juice lemon. 4. Combine quinoa, pine nuts, herbs, and lemon juice.

Notes

Also great with chicken broth! This is a great twist on basic quinoa.
