Prep: 1. Mince garlic, grate cheese. Make: 1. Heat olive oil in a small saucepan over medium heat. Add garlic and sauté until browned, about 1 minute. 2. Add quinoa and toast for 1 minute, stirring frequently. 3. Add broth, turn up heat and bring to a boil. Cover and simmer until liquid is absorbed, about 12-15 minutes. Remove from heat and let sit, covered, for 5 minutes. 4. Mix in cheese and serve.
This is also great with chicken broth.
