Zucchini Bread

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 egg
  • 1/3 cup canola oil
  • 1/2 cup unsweetened applesauce
  • 3/4 cup sugar
  • 2 teaspoons vanilla extract
  • 1 cup grated zucchini
  • 1/3 cup finely chopped walnuts

Directions

Prep: 1. Preheat oven to 325. Grease a loaf pan. 2. Shred zucchini and chop walnuts. Make: 1. In a large bowl, whisk together flour, salt, baking soda, baking powder, cinnamon and nutmeg. 2. In a separate bowl, whisk together egg, oil, applesauce, sugar and vanilla. Add flour mixture and stir until well combined. 3. Fold in zucchini and walnuts then transfer batter to prepared pan. Bake until toothpick inserted in the middle comes out clean, 50 to 60 minutes. 4. Cool in pan on rack for 30 minutes then remove bread from pan and continue cooling on rack.

Notes

This is amazing topped with homemade whipped cream! If you want to serve it for breakfast or brunch instead of dessert we recommend reducing the sugar to 1/2 cup.
