Prep: 1. Rinse quinoa in a fine-mesh strainer under running water. Drain. Make: 1. Add water (or use broth) and quinoa to saucepan and bring to a boil. 2. Lower heat, cover and cook 15 minutes. 3. Remove from heat and let stand covered for 5 minutes. 4. Fluff quinoa gently with a fork and serve.
Many people prefer to use broth to cook quinoa. We love the "restorative broth" in the gatheredtable library, but for a quick weeknight any kind will work. Optional step: After rinsing, toast quinoa with a dash of olive oil for 1 minute before adding water to the saucepan.
