Prep: 2. Bring a large pot of salted water to a boil 1. Peel and cube sweet potatoes. Make: 1. Add potatoes to boiling water and cook until tender, 20-30 minutes. Drain. 2. With an electric mixer on low, or a potato masher, blend potatoes, slowly adding milk, about 1/4 a cup at a time. Use more or less to achieve desired texture. 3. Add butter and maple syrup to taste. Blend until smooth. Serve warm.
If you don't mind a rougher texture, you can simply use a potato masher or big spoon instead of the electric mixer. For a more savory dish leave out the maple syrup.
