Prep: 1. Boil water for beets. 2. Peel beets and cut them into slices. 3. Pick the leaves from thyme and sprinkle over cheese. Season with salt and pepper. 4. Chop onion. 5. Cut goat cheese into disks. Make: 1. Preheat broiler. 2. For dressing, add onion, vinegar, oil, honey, salt and pepper and set aside. 3. Steam beets for 8-10 minutes until cooked through. 4. Meanwhile, place goat cheese and pine nuts onto parchment paper on a non-stick baking sheet. 5. Broil cheese and nuts for 3-5 minutes. Watch closely. 6. While cheese cooks, plate beets with salad greens. 7. Top greens with cheese and nuts, drizzle with dressing, serve immediately.
