Breakfast For Dinner Burritos

Ingredients

  • 1/2 cup monterey jack cheese
  • 2 avocados, sliced
  • 2 tomatoes, sliced
  • 1/2 cup fresh cilantro, chopped
  • 1- 15 ounce canned black beans
  • 4 flour tortillas
  • 8 eggs
  • 1/4 cup of salsa

Directions

Prep: 1. Grate cheese. 2. Slice avocado and tomatoes. 3. Chop cilantro. 4. Drain and rinse beans. Make: 1. Heat beans in the microwave. 2. Warm tortillas in microwave. 3. Scramble eggs. 4. Spread beans down in middle of tortilla with cheese, eggs, avocados, cilantro and salsa. 5. Fold the short sides of the tortillas in, roll length wise, and serve.

Notes

Make it your own by adding bacon or your favorite meat! We love leftover steak. Try sprinkling in a handful of scallions, chiles and olives.
