Prep: 1. Boil water for pasta. 2. Chop onion, carrots, celery, garlic. Make: 1. Cook pasta according to package instructions. (when done, drain and return to pot) 2. Meanwhile, heat oil in heavy pan, sauté onion and garlic. 3. Add celery and carrot, sauté for 5 minutes. 4. Add beef, salt, pepper, sauté/brown meat. 5. Add tomato paste, sauté 3 minutes, then add wine. 6. Simmer to reduce liquid by half, about 20-30 min. 7. Serve over spaghetti or any pasta with cheese.
