Prep: 1. Boil water for pasta. 2. Cut cauliflower into florets. 3. Shred cheese. Make: 1. Cook pasta according to package. During last 2 minutes of cooking add cauliflower to pasta (or steam separately if you prefer). 2. Meanwhile, in a medium saucepan, combine milk, cream cheese, flour, salt, pepper, garlic powder and cayenne, if desired. 2. Cook over medium-high heat, stirring, until mixture comes to a slow boil, 5 to 7 minutes. 3. Remove pan from heat; stir in remaining cheeses and mustard until cheese melts. 4. In a bowl, toss pasta with cauliflower; pour cheese mixture over top; stir.
Can also replace the cauliflower with kale or another green of choice.
