Roasted Chicken Legs with Lemon & Thyme

Ingredients

  • 2 garlic cloves, smashed
  • 1 lemon, sliced
  • 4 chicken legs (2 1/2 pounds total)
  • 3 tablespoons extra-virgin olive oil
  • 5 sprigs fresh thyme
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Directions

Prep: 1. Smash garlic. 2. Slice 4 lemon slices. 3. Toss chicken with oil, thyme sprigs, garlic, salt, and pepper in a large bowl, then transfer to a large (17- by 12-inch) shallow baking pan (1 inch deep). Refrigerate until ready to make. Make: 1. Put oven rack in upper third of oven and preheat oven to 500. 2. Bake chicken 10 minutes, then add lemon slices to pan. Continue to bake until chicken is golden and cooked through, 15-20 minutes more. 3. Serve chicken with lemon slices.
