Prep: 1. Prepare grill for cooking over direct heat with medium-hot charcoal (moderate heat for gas). 2. While coals are lighting, stir together lime juice, oil, tabasco, and salt. 3. Put chicken in a large bag with 1/3 cup marinade (reserve remainder) at room temperature while grill heats. 4. Stir honey into remaining marinade until dissolved to make sauce. Make: 1. Grill chicken on lightly oiled grill, covered only if using a gas grill. Turn chicken over occasionally and cook 8-10 minutes, until just cooked through. 2. Brush both sides of chicken with some of reserved sauce, then grill about 30 seconds more on each side, until lightly browned. 3. Serve chicken drizzled with remaining sauce.
