Prep: 1. Boil water. 2. Tear radicchio. Make: 1. Gently add the eggs to the boiling water and cook for 6 minutes; rinse under cold water and peel. 2. Cook bacon over medium heat until crisp, 7 to 9 minutes; remove, crumble, set aside. 3. Add vinegar and olive oil to bacon drippings; stir to combine. 4. Toss arugula and radicchio in a medium bowl with warm dressing. 5. Serve topped with the eggs, bacon, and 1/4 teaspoon pepper.
If you can find it frisee (or curly endive) is great in place of the arugula in this.
