Prep: 1. Chop cilantro. 2. Slice scallions. Make: 1. Heat 1 tablespoon of oil in a pan over medium-high heat. 2. Season salmon with paprika, salt and pepper, and cook 3-4 minutes per side to desired doneness. 3. Combine cilantro, scallions, 2 tablespoons lemon juice, remaining oil, and 1/4 teaspoon each salt and pepper. Serve: Drizzle cilantro vinaigrette over salmon.
