Grilled Vegetable Pizza

Ingredients

  • 2 plum tomatoes, thinly sliced crosswise
  • 2 scallions, sliced
  • 1 avocado, diced
  • 3 tablespoons extra virgin olive oil
  • 2 cups baby spinach
  • 2 tablespoons red wine vinegar
  • salt and pepper, to taste
  • 1/8 cup all-purpose flour, for shaping dough
  • 1 pound store-bought pizza dough
  • 1 log (5 ounces) soft goat cheese, crumbled

Directions

Prep: 1. Preheat grill to medium high. 2. Slice: plum tomatoes and scallions. 3. Dice avocado. Make: 1. Brush a large baking sheet with oil. 2. Combine spinach, avocado, scallion, vinegar, and remaining tablespoon oil in a bowl; season with salt and pepper and toss to combine. 3. On a lightly floured work surface, roll and stretch dough to two 8-inch ovals or rounds. Transfer to prepared sheet. Brush tops with 1 tablespoon oil. 4. Transfer dough from baking sheet to grill. 5. Cook, without turning over, until undersides are firm and begin to char, 2-3 minutes. 6. Using tongs and a large spatula, place crusts on baking sheet grilled side up. 7. Add to crusts: tomatoes, scallions, goat cheese, salt and pepper. 9. Slide crusts back onto grill. Grill until cooked through and cheese begins to melt, 3-5 minutes. 10. Transfer to a cutting board. Serve: Top pizzas with spinach mixture and serve sliced.

Notes

If you've got mad grill skills you can just flip and top the dough directly on the grill (without transferring back to the baking sheet). We LOVE homemade pizza, it's faster and easier than take out.
