Prep: 1. Chop kale. 2. Mince garlic. Make: 1. Cook spaghetti according to package instructions until al dente. 2. While pasta is cooking, heat a skillet over medium-high heat and pour in 4 tablespoons extra-virgin olive oil. 3. Stir in kale and heat through. Move kale from center of pan and add garlic. 4. Allow to cook for a minute and stir into greens, add salt to taste. 5. When the pasta is cooked, drain, reserving some of the cooking liquid. 6. Add drained pasta to greens with goat cheese, red pepper flakes, and 1 tablespoon extra-virgin olive oil. 7. Stir greens, pasta, and goat cheese together. 8. Add cooking water as needed to loosen.
