Garlicky Kale and Bacon Pizza

Ingredients

  • 1 pound store-bought or homemade pizza dough
  • 1/8 cup cornmeal, for dusting baking sheet
  • 4 strips bacon, cut into pieces
  • 2 1/2 cups curly kale leaves, torn into 1-inch pieces
  • 2 teaspoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 6 ounces fresh mozzarella, thinly sliced
  • 1/3 cup thinly sliced red onions
  • 1/4 cup parmesan cheese, for garnish

Directions

Prep: 1. Preheat oven to 450 (500 if your oven goes that high). 2. Roll out pizza dough on a lightly floured surface until it is roughly 12 inches wide and 1/4-inch thick. 3. Invert a baking sheet and sprinkle it liberally with cornmeal. Transfer the dough to the baking sheet. 4. Dice bacon. Chop kale. Slice mozzarella. Make: 1. Cook the diced bacon over medium-low heat. Transfer bacon pieces with a slotted spoon to a large bowl, along with 2 teaspoons of the bacon drippings. 2. Add the kale, olive oil and garlic to the bowl; toss to combine. 3. Arrange mozzarella slices in a single layer on the pizza dough, leaving room around the edges. Place kale-bacon mixture on top of the cheese, then top all with sliced red onions. 4. Brush the border of the pizza dough with the reserved bacon drippings. 5. Bake for 10 to 12 minutes, rotating half-way through, until crust is fully baked and golden brown. 6. Move pizza from oven to a cutting board, sprinkle with Parmesan cheese, slice and serve.
