Thai Pork Salad

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1 1/4-pound pork tenderloin, thinly sliced
  • 1/2 teaspoon sea salt, or to taste
  • 5 cups shredded Napa cabbage
  • 1 cup shredded carrots
  • 1/4 cup torn fresh mint leaves
  • 2 scallions, chopped
  • 2 limes, juiced
  • 2 teaspoons fish sauce

Directions

Prep: 1. Thinly slice pork and season with 1/2 teaspoon salt. 2. Shred cabbage and carrots, chop scallions. 3. Juice limes. Make: 1. Heat 1 tablespoon of the oil in a large skillet over medium-high heat. 2. In batches, cook the pork until browned and cooked through, 1-2 min. per side. 3. Transfer to a large bowl and toss with cabbage, carrots, mint, scallions, lime juice, fish sauce, and remaining 2 tablespoons oil.
