One Pot Kale and Quinoa Pilaf

Ingredients

  • 1 bunch kale, chopped into 1" lengths
  • 2 scallions, chopped
  • 3 tablespoons toasted pine nuts
  • salt and pepper, to taste
  • 1 cup quinoa
  • 1 lemon, zested and juiced
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup crumbled goat cheese

Directions

Prep: 1. De-rib kale, and chop into 1-inch lengths. 2. Mince scallions. 3. Toast pine nuts. 4. Zest and juice lemon Make: 1. Bring 2 cups salted water to a boil in a covered pot. 2. Add 1 cup quinoa to the pot, cover, and lower heat until it is just enough to maintain a simmer. Let simmer for 10 minutes, then top with kale and re-cover. Simmer another 5 minutes, then turn off heat and allow to steam for 5 more minutes. 3. While quinoa is cooking, take a large serving bowl, add half of the lemon juice, all of the zest, scallions, olive oil, pine nuts, and goat cheese. 4. When quinoa and kale are done, fluff mixture and pour it into bowl with remaining ingredients. 5. Toss to combine, seasoning with salt, pepper, and the remaining lemon juice.
