Grilled Shrimp and Red Onions with Feta, Cilantro and Lime

Ingredients

  • 1/4 cup fresh lime juice
  • 3 garlic cloves, pressed
  • 2 1/2 tablespoons chopped fresh cilantro
  • 1/2 red onion
  • 12 shrimp, peeled
  • 6 tablespoons extra virgin olive oil
  • 4 skewers
  • 2 ounces crumbled feta cheese

Directions

Prep: 1. Squeeze lime. 2. Press garlic. 3. Chop cilantro and onions. 4. Peel and devein shrimp. Make: 1. Mix olive oil, lime juice, garlic cloves and 1 tablespoon cilantro in large bowl. 2. Add shrimp; toss to coat. Let stand 10 minutes. 3. Prepare barbecue (medium-high heat) or preheat broiler. 4. Remove shrimp from marinade; set marinade aside (don't discard). Skewer 6 shrimp on each of 2 skewers. Skewer onions on remaining skewer. 5. Grill onions until tender and cooked through, about 3 minutes per side. 6. Add shrimp to grill; cook until pink, about 2 minutes per side. Remove from skewers; divide between plates. 7. Meanwhile, bring marinade to boil. Mix in onions, cheese and remaining 1 1/2 tablespoons cilantro. 8. Spoon onion mixture over shrimp.

Notes
