Stir-Fried Shrimp, Snow Pea, and Walnut Salad

Ingredients

  • 2 tablespoons water
  • 2 tablespoons plus 2 teaspoons white-wine vinegar
  • 2 teaspoons soy sauce (or tamari)
  • 1 teaspoon sesame oil
  • 1 teaspoon of sugar
  • 1 pound of shrimp, shelled
  • 4 cloves of garlic
  • 4 tablespoons extra virgin olive oil
  • 6 tablespoons coarsely chopped walnuts
  • 1/2 pound snow peas, trimmed
  • 2 Belgian endives
  • 6 cups watercress sprigs, coarse stems discarded

Directions

Prep: 1. Mix: 2 tablespoons water, 2 tablespoons vinegar, soy sauce, sesame oil, sugar, and a pinch of salt. 2. Slice endive and mince garlic. 3. Mash together garlic with 1 teaspoon salt to make a paste. 4. Toss shrimp with garlic paste and 2 teaspoon olive oil; marinate 10 minutes. Make: 1. In a pan heat 2-3 teaspoons olive oil and sauté the walnuts, stirring, for 30 seconds. 2. Add snow peas; sauté 45 seconds, or until crisp-tender. Transfer the walnuts and snow peas to a bowl. 3. Add shrimp to pan; sauté 1 minute on each side and add soy sauce mixture. Simmer shrimp, covered, another two minutes, or until cooked through. 4. Add the shrimp mixture to the bowl with the walnuts and snow peas. 5. In a large bowl, mix: endive, watercress, 1-2 tablespoons olive oil, 1-2 teaspoons vinegar, and salt and pepper to taste. Serve: Greens topped with the shrimp mixture.
