Prep: 1. Boil water for quinoa and cook quinoa according to package instructions. Meanwhile... 2. Tear lettuce. 3. Cut/slice: apples, carrot and avocado. 4. Grate garlic. 5. Juice lemon. 6. Whisk together lemon juice and mustard in a small bowl. 7. Slowly drizzle in oil, while whisking and add in garlic, honey, salt and pepper. Set aside. Make salad: 1. Toss together lettuce, quinoa, apple, carrot, almonds and avocado in a bowl. 2. Toss with dressing and serve.
The original recipe calls for 4 slices of cooked bacon, chopped! We left it out for our vegetarian friends, so feel free to toss in bacon and a handful of crumbled cheese.
