Prep: 1. Grate parmesan cheese. Make: 1. Get out three shallow bowls. 2. Bowl #1 - Mix flour, salt and pepper 3. Bowl #2 - Whisk eggs. 4. Bowl #3 - Mix breadcrumbs, Italian seasoning and parmesan 5. Heat oil and butter in a non-stick skillet. 6. Dip each chicken breast in all three bowls: first in flour, then in eggs, then in bread crumbs/parmesan. 2. Sauté each chicken breast on both sides until done (3-5 minutes per side). If chicken breasts are thick cover the frying pan while cooking.
This is a great way to dress up your basic chicken breast.
