Firecracker Ice Pops

Ingredients

  • 1/2 pound strawberries, hulled and quartered (1 1/2 cups)
  • 1/4 cup sugar
  • 1/2 pound blueberries (1 1/2 cups)
  • 1 1/4 cups low-fat plain yogurt
  • 8-10 popsicle sticks

Directions

Prep: 1. Hull and quarter strawberries. Make: 1. In a food processor, puree strawberries with 1 tablespoon sugar. Pour into popcicle molds, or small cups so that they are 1/3 full. 2. Whisk together yogurt and 2 tablespoons sugar. Pour into popsicles molds on top of strawberry mixture so they are 2/3 full. 3. In processor, puree blueberries with 1 tablespoon sugar. Pour into molds on top of yogurt. 4. Place popsicle sticks into the center of each one. 5. Freeze for 3 hours, or up to a week. To make removing the popsicles easier, run the molds under hot water for a few seconds.

Notes

These are great with any fruit! Since they are just fruit and yogurt we've been known to eat them for breakfast on super hot days.
