1. Boil salted water for pasta and cook pasta according to package instructions. 2. Meanwhile, fry four eggs in 1 tablespoon butter, keeping them runny. 3. Drain pasta, reserving some cooking water. 4. Toss pasta with olive oil, 3 tablespoons butter, parmesan, salt, pepper and enough cooking water to moisten. 5. Top and roughly cut up eggs with pasta and serve.
Make this pasta your own by adding any toppings you like! Red chili flakes are excellent if you want to spice it up.
