Prep: 1. Cube watermelon and feta, chop mint. 2. Juice lemon. Make: 1. Assemble in bowl: watermelon, blueberries, feta, mint. 2. Make the dressing: Whisk together honey, lemon, and vinegar. 3. Pour dressing over top of the salad, toss very gently.
Perfect for a hot summer day and so festive for the 4th of July! If you want more white in your red, white, and blue add 1-2 cups of chopped jicama.
