Prep: 1. Mince ginger and garlic. 2. Dice tofu, onion, broccoli and red bell pepper. 3. To make teriyaki sauce: whisk soy sauce, sugar, vinegar, ginger, garlic, red pepper flakes, and 1/2 cup water in a bowl. Set aside. Make stir-fry: 1. Add 2 tablespoons of safflower oil to a skillet over medium high heat 2. Add onions, bell pepper and tofu and cook until onion and bell pepper brown, about 3-5 minutes. 3. Stir in the broccoli and teriyaki sauce, stirring frequently, until stems are crisp and tender, about 5 minutes. Serve immediately.
