Chopped Salad with Shrimp and Lime-buttermilk Dressing

Ingredients

  • 1 lime
  • 6 tablespoons buttermilk
  • 1 avocado, halved, pitted, and peeled
  • sea salt and freshly ground pepper, to taste
  • 1 tablespoon canola oil
  • 1 pound pre-cooked shrimp
  • 3 medium romaine hearts, coarsely chopped
  • 1/2 cup pepitas (pumpkin seeds), toasted
  • 1/2 cup fresh cilantro leaves

Directions

Prep: 1. Juice and zest the limes (you should get about 1/4 cup juice and 1 teaspoon zest). 2. Slice avocado. 2. Mix in blender: buttermilk, avocado, lime zest and juice, and 2 tablespoons water. Season with salt and pepper. Make: 1. In a large bowl, toss together romaine, pepitas, cilantro, shrimp, and dressing to taste; serve immediately.
