Pork Chops with Oranges and Parsley

Ingredients

  • 3 oranges
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon extra virgin olive oil
  • 4 bone-in pork chops
  • sea salt and freshly ground pepper, to taste

Directions

Prep: 1. Using a vegetable peeler, peel off 2 strips of orange peel and juice 1/2 cup of orange juice from one orange. 2. Remove peel and pith of 2 oranges and cut into segments. 3. Chop parsley. Make: 1. Heat oil in a large pan over medium-high. 2. Season pork with salt and pepper and cook until cooked through, about 9 minutes, flipping once. Set aside. 3. Add orange zest and juice to pan. 4. Cook until slightly thickened, about 1 minute. 5. Remove from heat and stir in orange segments. 6. To serve, spoon orange mixture over pork chops and top with parsley.
