Pistachio Crusted Fish

Ingredients

  • 1/2 cup shelled pistachios
  • 2 eggs
  • 2 tablespoons dijon mustard
  • 1 pound tilapia fillets
  • 1/4 cup cornmeal
  • sea salt and pepper, to taste
  • 1 tablespoon extra virgin olive oil

Directions

Prep: 1. Shell pistachios (if necessary) and coarsely grind them in a mini food processor or coffee grinder (you can also chop finely by hand). Make: 1. Get out two shallow bowls. 2. Bowl #1 - Whisk the egg and mustard. 3. Bowl #2 - Combine finely diced pistachios, corn meal and salt and pepper to taste. 4. Heat a few tablespoons of olive oil over medium high heat in a large skillet. 5. While oil heats, dip the fish into the egg followed by the cornmeal/pistachio mixture. 6. Place fish into the skillet and fry each side about 4 minutes. Reduce heat if crust gets too brown. Fish is done when the crust is browned and the fish flakes easily.
