New England-Style Shrimp Rolls

Ingredients

  • 1 pound shrimp
  • 4 french rolls
  • 2 lemons
  • 2 stalks celery
  • 1/2 cup fresh tarragon, chopped (about 1/2 a bunch)
  • 4 teaspoons Dijon mustard
  • 4 teaspoons Old Bay seasoning
  • 1 tablespoon hot sauce (optional)
  • 1 shallot
  • 1/4 cup mayonnaise

Directions

Prep: 1. Toss the shrimp with 3 teaspoons Old Bay seasoning. 2. Mince celery, tarragon, and shallot. Make: 1. Preheat a skillet with 1 tablespoon oil. Add shrimp and cook for 2 minutes per side, or until opaque and cooked through. Remove from heat and add to a bowl. 2. Mix the shrimp with the mayonnaise, tarragon, celery, remaining Old Bay, hot sauce (if using), salt, and pepper to taste. 3. Toast buns either on a dry skillet or in a toaster. 4. Spread shrimp mixture evenly onto each bun.

Notes

This delicious summer sandwich is like a poor man's lobster roll. For a lighter option use plain yogurt instead of mayonnaise and put in a lettuce leaf wrap.
