Prep: 1. In a medium bowl, mix salt and sugar with 4 cups cool water until dissolved, add pork loin and let stand about 45 minutes. 2. 20 minutes before loins are done brining, preheat the grill (exact time will depend on your grill). Make: 1. Once pork loin has brined remove from brine and pay dry. Rub with oil, pepper, chili powder, and cumin. 2. Put the pork on the hot grill grates. Close the lid and grill for 7 minutes. Turn the pork over, close the lid, and grill for another 6 minutes. 3A. Gas Grill: Turn off the heat (keep the lid closed) and continue to cook the pork for another 5 minutes. 3B. Charcoal Grill: Move the pork loin to the coolest part of the grill (so that it isn't over any coals, cover, and continue to cook for 5 minutes. 4. Pork is done when an instant-read thermometer inserted into the middle of the thickest end of the tenderloin reads 145° to 150°F. 5. Remove the pork from the grill and let rest for 5 minutes before carving. Cut across the grain into 1/2-inch slices and serve.
