Grilled Pepperoni Pizza with Vegetables

Ingredients

  • 1 pound pizza dough
  • 2 tablespoons flour for dusting dough
  • 2 tablespoons extra virgin olive oil, for brushing on grill and pizza
  • 1/2 cup marinara sauce
  • 2 cups mozzarella
  • 5 ounces sliced pepperoni
  • 1/2 cup thinly sliced zucchini
  • 1 Roma tomato, thinly sliced
  • 1/2 cup thinly sliced red bell pepper
  • sea salt and pepper to taste

Directions

Prep: 1. Preheat grill. 2. Slice zucchini, tomato, and red pepper. 3. Shred cheese. Make: 1. Roll out dough on a floured piece of parchment paper (or foil), brush top with olive oil. 2. Using a paper towel soaked in olive oil and tongs, oil the grill grates to prevent sticking. 3. Transfer pizza dough to grill using parchment paper, and flip (olive oil side down) on to the grill, removing parchment paper. 4. Cover the grill and let cook until bottom begins to brown and doesn't stick to the grill, about 2-3 minutes. 5. Flip the dough onto a plate (cooked side up) and add all the toppings. If using a gas grill turn the burners to low, if using charcoal either spread out coals, or place dough on a cool edge of the grill. 6. Slide dough back onto grill, cover and cook until cheese has melted, 5-6 minutes. 7. Slice and serve!

Notes

You'll likely have some extra zucchini and red pepper left after topping the pizza, we highly recommend just slicing them up and grilling them alongside the pizza (as long as you don't need them for later in the week!)
