Prep: 1. Cut carrots into matchsticks or shred. 2. Juice lemon. Make: 1. Combine the tahini, lemon juice, maple syrup, curry powder, salt and pepper. Whisk well. 2. Drizzle over carrots (use more or less dressing to taste), toss, and top with pumpkin seeds.
