Prep: 1. Boil water for couscous. 2. Juice lemon, cube cheese and slice tomatoes. Make: 1. Add the couscous, tomato paste, oregano, and a pinch of salt to the boiling water, cover, remove from heat and let sit for 5 minutes. 2. Transfer to a large bowl and add the chopped parsley, sun-dried tomatoes, olives, olive oil, and lemon juice. 3. Season to taste with salt and pepper, add the cheese and toss. Serve warm or chilled.
This salad is great either warm or chilled.
