20-Minute Hoisin Skillet Salmon

Ingredients

  • 1 (15 ounce) can black beans, drained and rinsed
  • 3/4 cup water
  • 2 tablespoons hoisin sauce
  • 1/4 teaspoon red pepper flakes
  • 2 cloves garlic, crushed
  • 4 cups medium broccoli florets
  • 1 pound salmon fillets, skin removed
  • 1/2 lemon, juiced
  • 2 tablespoons fresh cilantro, roughly chopped
  • pinch of sea salt

Directions

Prep: 1. Drain and rinse beans, crush garlic. 2. Cut broccoli into florets. 3. Juice lemon and chop cilantro. Make: 1. Combine the beans, water, hoisin sauce, red pepper flakes and garlic in a skillet. 2. Place salmon on top and broccoli around it. Bring to a simmer over medium heat. 3. Once simmering, cover the skillet and cook until the salmon is flaky and just cooked through and the broccoli is crisp-tender, 5 to 6 minutes. 4. Top with lemon juice, cilantro and salt to taste.
