Baked Salmon with Herbs and Lemon

Ingredients

  • 1 pound fillet of salmon, skin on
  • 1 tablespoon shallot, finely chopped
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • 1 teaspoon dried dill
  • 1 tablespoon of extra virgin olive oil, plus more for the pan
  • 1 tablespoon lemon zest (from about 1 lemon)
  • pinch of sea salt to taste

Directions

Prep: 1. Let salmon come to room temperature. Place a baking dish half full of water in the oven on the lower rack and preheat oven to 250°F. 2. Finely chop the shallot, parsley, and basil. Zest the lemon. Mix shallots, herbs, and lemon zest together with olive oil. Make: 1. Lightly oil a a broiler pan (or oil a baking rack and place it on a baking tray). Place the salmon fillet skin side down on the rack. 2. Pat the shallot/herb mixture on top of the salmon, forming a thick layer. 3. Bake for 25 - 30 minutes. The fish is done when it flakes easily. 4. Sprinkle each fillet with the salt and serve.
