Mix together all dry ingredients and shredded carrots. 2. Whisk together apple, milk, eggs, and vanilla. 3. Combine flour and milk mixtures, stir in dried cranberries. 4. Pour batter into prepared muffin tin and bake for 10-12 minutes.
