Flax, Carrot, Apple Muffins

Ingredients

  • 1 1/2 cups whole wheat flour
  • 3/4 cup flaxseed meal
  • 3/4 cup rolled oats
  • 1/2 cup brown sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 2 cups shredded carrot
  • 2 cups shredded apple
  • 3/4 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract

Directions

Prep: 1. Pre-heat oven to 350. Grease a muffin tin or use paper liners. 2. Grind oats into meal in a food processor or coffee grinder. 3. Shred carrots and apple. Make: 1. Mix together all dry ingredients and shredded carrots. 2. Whisk together apple, milk, eggs, and vanilla. 3. Combine flour and milk mixtures, stir in dried cranberries. 4. Pour batter into prepared muffin tin and bake for 10-12 minutes.

Notes

These health packed muffins are sure to please! You can also puree the carrots and apples in a food processor if you prefer.
