Prep: 1. Preheat oven to 400. Grease a cookie sheet. 2. Cut cauliflower into florets. 3. Grate cheese (if using), use the smaller side of your cheese grater (like you would for parmesan) if possible). Make: 1. Get out 3 shallow bowls. 2. Bowl #1 - Add almond flour. 3. Bowl #2 - Beat egg. 4. Bowl #3 - Combine cheese (if using), corn meal, chia seeds, salt and pepper. 3. Dip cauliflower into almond flour, egg and then cornmeal mixture. 4. Place on baking sheet and bake for about 16 to 20 minutes (flipping half way through if desired).
To make this paleo just omit the cheese and use extra almond flour instead of the cornmeal. These also make a great side dish.
