Prep: 1. Preheat your oven to 375. Grease a muffin tin or use paper liners. 2. Combine milk and vinegar, set aside to sour. 2. Mash banana. Dice pear and figs. Make: 1. Whisk together wheat bran, flour, quinoa, chia seeds, baking powder, baking soda, and salt. 2. In a separate bowl whisk together banana, apple sauce, soured milk, eggs, and molasses. Combine with the flour mixture. 3. Fold in pears and figs. 4. Pour mixture into prepared pan and bake for 25-30 minutes, until a toothpick inserted comes out clean.
The molasses in these gives them a "darker" flavor, for a "brighter" flavor substitute 1/2 cup brown sugar or agave (agave will make them sweeter too).
