Basic Crepes

Ingredients

  • 2 large eggs
  • 3/4 cup milk
  • 1 cup all purpose flour
  • 3 tablespoons butter
  • 1/4 teaspoon salt
  • 1/2 cup water

Directions

Make: 1. Add butter to a small saucepan and heat over medium heat whisking constantly until it begins to brown. Remove from heat and set aside. 2. Combine all the remaining ingredients in a blender or food processor (or whisk by hand). Add the browned butter and pulse for 30 seconds or until well combined. 3. Heat a 12 inch non-stick pan and lightly grease. Pour 1/3 cup of batter into the center of the pan and swirl to spread evenly (crepes should be very thin). Cook for 30 seconds and flip. Cook for another 10 seconds and remove to a platter. Continue lightly greasing pan and cooking crepes until batter is used. 4. Serve plain, or with any desired sweet or savory filling.

Notes

If you can find it these are great with 1/2 cup buckwheat flour substituted in for half of the all purpose flour.
