Kale and Prosciutto Sandwich with Squash Fries

Ingredients

  • 1 bunch kale, chopped
  • 1 medium butternut squash
  • 4 1/2 tablespoon extra virgin olive oil
  • 2 1/4 teaspoon sea salt, divided
  • 1/2 lemon, juiced
  • 1/8 teaspoon black pepper
  • 8 slices sourdough bread
  • 4 ounces goat cheese
  • 4 slices prosciutto

Directions

Prep: 1. De-rib and chop kale. Juice lemon. 2. Peel squash and remove seeds. Cut into long thin slices (about 1/4-inch thick by 2 inches long). 3. Place squash in a large bowl and generously coat with 2 tablespoon olive oil. Sprinkle with salt and toss. Make: 1. Preheat broiler. 2. Lay squash fries onto large baking sheet. 3. Broil tray in oven until crispy. 4. Meanwhile, cook kale in olive oil until wilted and softened. Season with lemon juice, 1/4 teaspoon salt and pepper. 5. Toast slices of bread. 6. Spread toasts with goat cheese and a spoonful of kale. 7. Top with a slice of prosciutto and another slice of bread. 8. Serve sandwiches with squash fries.
