Prep: 1. Bring a pot of water to a boil for the shrimp. 2. Quarter and slice cucumber. Dice onion. 3. Chop cilantro. Mince garlic and serrano. 4. Juice limes. Make: 1. Cook shrimp in the boiling water for about 3 minutes or until they turn opaque. (or use pre-cooked shrimp) 2. Drain and rinse shrimp under cold running water to stop the cooking. 3. Mix in a bowl: cucumber, onion, cilantro, garlic, chile, lime juice, and olive oil. 2. Add shrimp and toss to combine; season with salt and pepper to taste. 3. Cover bowl and refrigerate ceviche for 30 minutes up to 2 hours to meld flavors. 4. Serve cold.
To save time you can also use pre-cooked shrimp!
