Penne with Swiss Chard and Garlic

Ingredients

  • 1 bunch swiss chard
  • 1/2 teaspoon dried red pepper flakes, or to taste
  • 4 garlic cloves, sliced thin
  • 2 tablespoons extra virgin olive oil
  • 1 cup canned chopped tomatoes, drained and rinsed
  • 1/2 pound penne
  • 1/2 cup parmesan cheese
  • sea salt and freshly ground pepper, to taste

Directions

Prep: 1. Bring a pot of water to boil for the pasta 2. Separate swiss chard stems and leaves. Coarsely chop leaves and chop stems into small pieces. 3. Thinly slice garlic cloves (can use more or less as desired). 4. Grate parmesan cheese. Make: 1. Cook pasta according to package instructions (when done drain and return to pot). 2. In a skillet lightly saute red pepper flakes and garlic in the oil over medium heat, stirring, about 2 minutes. 3. Add stems and 1/4 cup of water and cook mixture, covered, for 3 minutes, or until stems are just tender. 4. Add leaves, tomatoes, another 1/4 cup of water, and salt and pepper to taste. Cook the mixture, covered, for about 3 minutes, or until leaves are tender. 5. In a bowl toss penne with chard mixture and 1/4 cup of the parmesan. Serve with additional parmesan sprinkled on top.
