Prep: 1. Juice and zest lemon. 2. Mince garlic. 3. Slice ciabatta, about 10-12 slices. 4. Slice brie into 1/4- 2 inch slices and ham. Make: 1. Preheat broiler. 2. In a blender, pulse oil, lemon juice, zest, garlic, sugar, salt and pepper to taste to combine to make vinaigrette. 3. Brush additional oil on both sides of bread and broil until golden brown, about 1 1/2 minutes. 4. Turn over and top with brie and broil until cheese melts, about 1-2 minutes. 5. Remove from oven and top cheese with ham slices. 6. In a bowl, toss arugula with vinaigrette and arrange a handful on each sandwich. Drizzle remaining vinaigrette over sandwiches.
Feel like grilling? Brush oil on both sides of bread and put on a cooking grate; sprinkle with salt and pepper. Grill for about 1 1/2 minutes. Turn over, top with brie and grill until cheese melts, about 1 1/2 minutes.
