Prep: 1. Boil water for pasta. 2. Chop mushrooms and parsley. 3. Mince garlic. Make: 1. Boil pasta according to package instructions. 2. Meanwhile, heat a large skillet to medium-high heat and cook mushrooms with 4 tablespoons of oil, sprinkled with salt and pepper. 3. When mushrooms are dry, add white wine and garlic. Cook until wine reduces. 4. Drain pasta, reserving some cooking water. 5. Toss mushrooms and parsley with pasta and add cooking water if needed to moisten. Serve with freshly ground pepper and parmesan.
