Orange and Arugula Salad

Ingredients

  • 4 cups arugula
  • 2 oranges, peeled and sliced
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • pinch of sea salt, to taste

Directions

Prep: 1. Slice oranges and then peel each slice. 2. Make dressing (olive oil, vinegar, salt). Make: 1. Toss arugula, oranges, and dressing in bowl.

Notes

This is a great winter and early spring salad when citrus fruits are at their peak. Use whatever oranges you like, our favorites are Cara Cara oranges.
