Prep: 1. Separate lettuce leaves. 2. Dice/chop: onion and cilantro. Make: 1. In a skillet, heat coconut oil over medium heat and add onions to saute for one minute. 2. Add chicken and cook until no longer pink, about 7-10 minutes. 3. Stir in cilantro, lime juice, fish sauce, chili powder, salt and pepper. 4. Spoon chicken mix onto each lettuce leaf and serve.
Top with hot sauce and/or coconut aminos for some extra flavor!
