Prep: 1. Peel and chop onion, carrots, and ginger. Make: 1. Bring vegetables and 6 cups water to a boil over high heat; season with salt and pepper. Cook until vegetables are tender, 5-10 minutes. 2. Stir in butter, then use a blender to puree soup in batches. 3. Stir in 1 tablespoon lemon juice and adjust seasoning before serving.
Just before serving, we recommend topping soup with a dollop of greek yogurt!
