Prep: 1. Remove outer leaves and stem from cauliflower and chop into tiny, rice sized, pieces (definitely use a food processor if you have one). 2. Chop/mince cilantro, onion and bell pepper. Make: 1. In a skillet, over medium heat, melt the coconut oil, then place the chopped cauliflower, onion and bell pepper in skillet. Add salt and pepper to taste. 2. Saute for about 5 minutes or until the cauliflower begins to become translucent, while stirring. 3. Place the cooked cauliflower in bowl and toss with cilantro before serving.
If you have a food processor, cut your hands on time in half by attaching the blade attachment and chopping to a fine grain.
