Cheesy Corn Bread Dumplings

Ingredients

  • 1 cup all purpose flour
  • 1 cup cornmeal
  • 1 teaspoon baking powder
  • pinch of baking soda
  • pinch of sea salt
  • 1 egg
  • 1 1/2 cup cheddar cheese
  • 3/4 cup buttermilk

Directions

Prep: 1. Bring a deep skillet of salted water to a boil. Make: 1. Mix flour, cornmeal, baking powder, baking soda and salt. 2. Beat an egg with buttermilk and grated cheddar. 3. Stir wet mix with dry, adding a little more buttermilk as needed to create a stiff batter. 4. Drop large spoonfuls of mix into liquid. Bring to a steady simmer, cover and cook until set and toothpick comes out clean, about 10 minutes. 5. Fish dumplings out with slotted spoon and serve.

Notes

These are a great addition if you're already making soup. Just cook them on top of the boiling soup instead of water! Depending on the soup you may have to add a little extra broth to make sure they float above the rest of the soup.
